  1. What people think they won’t eat has rarely anything to do with taste. It’s in the head. As I have already posted elsewhere, the situation reminds me of my friend Luciano Vistosi in Venice, who had a full bowl of pasta not knowing it was sauced with onions, which he would never eat. After he learned what the sauce consisted of, he had two more servings.
    This sauce you’ve made with mushrooms is one of several combinations with cream, ham, butter, and parmigiano. Another is with asparagus, and yet another with English peas, which can be a great hit if the peas are very young and very fresh.
    That is a very nice texture you’ve got there, Irene, very appetizing. Nice job!

    I’m waiting for my book top arrive. I would like to offer some alternatives to some recipes using rice pasta so that folks who allergic to wheat may enjoy them too. I cook wheat free for my significent other who is allergic to wheat only. She is not allergic to gluten in any form.
