  2. There are more variations possible in the basic combination of pasta, butter, and cheese than most people may have dreamt of. It’s part of the genius of this cuisine that, with what might be less than absolute objectivity, I think reigns above all others, pace Julia Child.
    The reason Italians can nourish themselves freely with butter and cheese and not worry about arteries is that they walk, to work, to home, to school, to the market, to the movies, to romantic encounters. Put that in your diet.
